  • 2teaspoons Macro Organic Spanish extra virgin olive oil
  • 1 Macro Organic brown onion, finely chopped
  • 2teaspoons garlic paste
  • 2 Macro Organic carrots, finely chopped
  • 800grams Macro Organic no-added-salt diced Italian tomatoes
  • 350grams Macro Organic wholemeal spiral pasta
  • 850grams Macro Organic lentils, rinsed, drained
  • 1/2 bunch continental parsley, leaves picked
  • 100grams Macro Organic salad mix

Description

You'll be spoiled for choice with this hearty, nutritious bolognese sauce base, paired here with wholemeal spiral pasta for a filling meal that goes the distance.

Method

Step 1 of 4

Heat oil in a large, deep frying pan over medium-low heat. Add onion, garlic and carrot. Cook, stirring, for 8 minutes or until softened. Add tomatoes and 1 cup water, stir well, then cook, uncovered and stirring regularly, for 15 minutes or until slightly thickened.

Step 2 of 4

Meanwhile, cook pasta in a large saucepan of boiling water according to packet instructions. Drain, reserving 1/2 cup cooking liquid.

Add lentils to sauce mixture and cook for a further 5 minutes or until sauce has thickened and lentils are heated through.

Step 4 of 4

Add pasta and reserved cooking liquid to pan. Toss for 2 minutes or until well combined and heated through. Reserve 2 tbs parsley leaves. Finely chop remaining leaves. Stir chopped parsley through pasta mixture and season well. Divide mixture among bowls. Sprinkle with reserved parsley. Serve with salad.
