Description

Try this easy, make-ahead quiche Lorraine recipe for a deliciously creamy filling encased in flaky filo pastry.

Method

Step 1 of 4

Preheat oven to 180°C/160°C fan-forced. Grease a 17 x 27cm slice pan with extra butter.

Step 2 of 4

Heat oil in a frying pan over medium heat. Add bacon and cook, stirring, for 5 minutes or until crispy.

Step 3 of 4

Layer and brush each filo sheet with butter. Press filo stack into pan, then trim pastry, leaving a 4cm border above pan edges.

Step 4 of 4

Lightly whisk egg and milk in a medium jug, then pour over pastry base. Top with onion, bacon and bocconcini, then bake for 30 minutes or until just set in centre. Stand in pan for 10 minutes. Season, slice and serve with baby spinach.
