  • 3 cups chicken stock
  • 2 cloves garlic, minced
  • 680grams rotisserie chicken, chopped
  • 1 pinch salt
  • 100grams parmesan, grated
  • 335grams shredded mozzarella
  • 15grams fresh parsley, chopped (optional, for garnish)

Description

A creamy and comforting casserole made easy by using leftover chicken and prepared alfredo sauce.

Method

Step 1 of 3

Preheat oven to 220°C/200°C fan-forced. Stir together uncooked pasta, alfredo sauce, chicken stock, garlic and rotisserie chicken in a baking dish. Season with salt to taste; stir. Cover tightly with aluminium foil and bake for 30 minutes.

Step 2 of 3

Uncover the baking dish and stir. Check the pasta for doneness, if still too hard, cover the dish and return to the oven until pasta is al dente.

Step 3 of 3

Once the pasta is done, top it with the parmesan and mozzarella for 5-10 more minutes or until cheese is melted and pasta is tender. Garnish with fresh chopped parsley.
