For the dressing
- 3tablespoons white wine vinegar
- 3tablespoons olive oil
- 1tablespoons wholegrain mustard
- 200grams duck breast
- 200grams rocket
- 1 large orange, peeled and segmented
- 1 medium red onion, peeled and finely sliced
- 4 lychees, fresh, peeled and halved
- 4 radishes, finely sliced
Description
Our recipe pairs plump, sweet lychees with a classic duck and orange salad making for the perfect flavour sensation to serve on a warm summer's day.
Method
Step 1 of 4
Pre-heat the oven to 200°C. Score the layer of fat on the duck breast and season. Place skin side down in a cold, non-stick pan and place on the heat, bringing up to medium, about 5 minutes. Flip the duck and sear the other side.
Step 2 of 4
Place the duck on a baking tray and roast for 3-4 minutes. Remove from the oven and set aside to rest.
Step 3 of 4
Place the rocket, orange segments, red onion, lychees and radishes in a large bowl. Whisk the dressing ingredients in a small bowl and tip into the salad, tossing well.
Step 4 of 4
Thinly slice the duck breast, add to the salad and serve.
