Description

Learn how to make crispy potato fritters with this easy and tasty recipe. Serve with dollops of creme fraiche and a sprinkling of chives.

Method

Step 1 of 7

Preheat oven to 200°C/180°C fan-forced. Line 2 large baking trays with baking paper.

Step 2 of 7

Place a colander inside a large bowl. Fill with cold water. Coarsely grate potatoes and place in submerged colander to prevent potato from turning brown.

Step 3 of 7

Remove colander from bowl and rinse potato under cold running water until water runs clear.

Step 4 of 7

Place a clean tea towel or paper towels on a flat surface. Spread potato over tea towel or paper towels. Cover with another tea towel or more paper towels and press to squeeze out excess liquid.

Step 5 of 7

Place a 7cm round cutter on 1 tray. Place 1/4 cup potato in centre of cutter and press down firmly to form a fritter. Carefully remove cutter and repeat to make a total of 12 fritters.

Step 6 of 7

Spray fritters generously with oil. Bake for 35 minutes or until golden and crunchy. Season.

Step 7 of 7

Combine creme fraiche with 2 tsp chives. Serve fritters topped with creme fraiche mixture and remaining chives, and seasoned with pepper.
