- 2 cups mash potato
- 3 large eggs
- 1 cup cheddar cheese
- 1/3 cup parmesan cheese
- 1/4 cup bacon, chopped and cooked
- 1/4teaspoons pepper (to taste)
- 1tablespoons lactose free sour cream (to serve)
- 1/4 cup chopped chives

Description
Delicious and quick mash potato, cheese and chive pies made in the pie maker.
Method
Step 1 of 6
Combine cooled mash potato, beaten eggs, cheddar cheese, bacon, chives and pepper into a mixing bowl. Mix until combined.
Step 2 of 6
Turn on the mini pie maker and spray with non stick cookie spray and let it heat up.
Step 3 of 6
Spoon 3 spoonfuls of filling into each pie dish in the pie maker. Sprinkle the top of each pie with Parmesan cheese.
Step 4 of 6
Close the pie maker and let cook for 5-8 minutes. Pies will be ready when the tops are nice and golden brown and crispy and the inside is nice and hot.
Step 5 of 6
Remove from pie maker and transfer to a place. Top with lactose free sour cream and sprinkle with chopped up chives and enjoy.

Cook the mash to your liking or use left over mash from the night before like I did. Cook the bacon on the stove top. Let cool and roughly chop up into small pieces. Make sure both are cooled before combining with other ingredients or the eggs will cook.
