Description
Layers of flaky filo pastry soaked in delicate sugar syrup. This easy dessert is crunchy and soft in all the right places.
Method
Step 1 of 5
Preheat oven to 190°C/170°C fan-forced. Lightly grease a 25 x 35cm (2.5cm deep) baking tray.
Step 2 of 5
To make the syrup, place honey, sugar and 1 cup water in a medium saucepan over medium heat. Stir for 5 minutes until sugar has dissolved. Increase heat to high and bring to the boil, then reduce to medium and simmer, uncovered, for 10 minutes or until syrup has thickened slightly. Stand for 15 minutes to cool.

Meanwhile, stack 2 filo sheets on top of each other. Starting at one short end, gently gather and scrunch into a loose fan strip. Place in tray. Repeat with remaining filo pastry. Bake for 10 minutes or until beginning to crisp.

Remove tray from oven and pour over butter. Return to oven and bake for a further 10 minutes or until lightly golden.
Step 5 of 5
Whisk sugar, milk, eggs and vanilla in a medium bowl until combined. Pour over filo and bake for 30 minutes or until golden and crispy on top. Pour over syrup and stand for 10 minutes. Using a sharp knife, cut pie into 12 pieces. Serve.
