- 3 corn cobs, kernels removed
- 1/2 cup flat-leaf parsley, roughly chopped (plus extra to serve)

- 1/2 cup smoked cheddar, grated
- 300grams dried macaroni
- 3 cup lite milk
- 1/4 cup panko breadcrumbs
- 1 cup tasty cheese, grated
- 1 loaf crusty bread (to serve)
- 250grams corned beef, shredded
- 120grams leafy salad mix (to serve)

Step 1 of 3
Cook pasta in a large pan of boiling salted water, for 10 minutes or until just tender. Drain and return to pan.

Meanwhile, preheat oven to 180°C. Grease 4 x 2-cup baking dishes. Melt butter in a saucepan over medium heat. Add flour and whisk until combined. Cook for 2 minutes. Remove from heat and gradually whisk in milk, until combined. Return to heat and whisk until sauce comes to the boil. Reduce heat to low and simmer for 3 minutes. Remove from heat. Combine cheeses, reserve 1/4 cup and stir remainder into sauce until melted.
Step 3 of 3
Combine pasta, corn, beef and parsley with sauce. Transfer to dishes. Combine breadcrumbs with reserved cheese and parmesan and sprinkle over tops. Bake for 20 minutes or until golden. Top with extra parsley and serve with salad and bread.
