- 7grams sachet dried yeast
- 1 cup milk
- 3 cup plain flour (plus extra for dusting)
- 2tablespoons extra virgin olive oil
- 1 lemon (wedges)
- 1teaspoons sea salt flakes
- 200grams fat reduced Greek-style feta (crumbled)
- 250grams fresh mozzarella (roughly chopped)
- 2tablespoons olive oil
- 1 free range egg
- 1tablespoons fresh oregano
- 1/4 cup chives
- 1teaspoons brown sugar
- 30grams unsalted butter

Method
Step 1 of 5
Place milk and butter in a small bowl and microwave on high for1 minute or until butter has melted. Transfer to a food processor. Add flour, yeast, extra virgin olive oil, sugar and salt flakes and process for 2 minutes or until a dough forms. Turn out into a lightly oiled bowl, then cover and prove for 1 hour or until doubled in size.

Meanwhile, combine cheeses, herbs and egg in a bowl. Season.

Divide dough into six pieces. On a lightly floured surface, roll out each piece to a 20cm round. Place 1/3 cup cheese mixture in centre of each round, gather edges to enclose, then flatten.

Preheat oven to 200°C/180°C fan-forced. Line baking tray with baking paper. Heat a large non-stick frying pan over medium-low heat. Add 1 tbs olive oil and half theflatbreads and cook for 4 minutes on each side or until golden. Repeat with remaining oil and bread.
Step 5 of 5
Transfer flatbread to tray and bake for 10 minutes or until dough is cooked through. Season and serve with lemon wedges.
