  • 1/4 cup red wine vinegar
  • 1tablespoons Dijon mustard
  • 1/2 cup extra virgin olive oil
  • 2 baby cos lettuce, trimmed, leaves separated
  • 1 avocado, halved, deseeded, cut into thin wedges
  • 320grams mix-a-mato mini tomatoes, halved
  • 4 free range eggs, soft-boiled, halved

Try our delicious cob salad! Packed with crunchy romaine lettuce, juicy tomatoes, creamy avocado, sweet corn, salty bacon, and fresh herbs. Enjoy today!

Method

Step 1 of 4

Heat a frying pan over medium heat and cook bacon for 4 minutes on each side or until golden and crisp. Transfer to a paper towel-lined plate to drain. Break each rasher into 4 pieces.

Step 2 of 4

Cook chicken in same pan over medium heat for 8 minutes on each side or until browned and cooked through. Transfer to a chopping board. Stand for 5 minutes before thinly slicing.

Step 3 of 4

Meanwhile, place vinegar, mustard and oil in a screw-top jar, shake well and season.

Step 4 of 4

Arrange lettuce in a dish. Top with chicken, bacon, avocado, tomato and egg. Spoon over dressing and serve.
