- 2 large tomatoes
- 6 leaf iceberg lettuce, finely shredded
- 12 slice wholegrain bread
- 4 rasher rindless bacon, cut into thirds
- 8 slice roasted turkey breast
- 1/3 cup aioli
- 1tablespoons olive oil
- 2 chicken breast fillets, cut in half through the centre
- 120grams potato chips (to serve)
Method
Step 1 of 6
Heat half the oil in a large non-stick frying pan over a medium-high heat until hot.
Step 2 of 6
Season chicken fillets on both sides with salt and pepper.
Step 3 of 6
Add 2 chicken pieces to the frying pan and cook for 3 minutes on each side or until golden brown and cooked through. Transfer to a plate and cover with foil to keep warm.
Step 4 of 6
Add remaining chicken fillets to pan, adding more oil as required. Transfer to a plate.
Step 5 of 6
Add the bacon to the pan and cook for 5 minutes or until golden and crisp. Transfer bacon to plate with chicken. Toast the bread slices.
Step 6 of 6
Place 8 slices of toast onto a chopping board. Spread each with aioli. Top 4 of the slices with chicken and turkey. Top remaining 4 slices with bacon, tomato and lettuce. Stack the bacon ones on top of the chicken ones and finish with the remaining toast. Cut in half diagonally. Place club sandwiches onto serving places. Serve with potato chips.
