  • 3/4 cup whipping cream
  • 1 1/4 cup fat Greek yoghurt
  • 1teaspoons vanilla extract
  • 150grams ready-made meringues
  • 300grams strawberries, chopped quite small
  • 150grams raspberries

Description

Using yoghurt gives this crowd-pleasing dessert a healthy twist. It is also particularly quick if you use ready-made meringue.

Method

Step 1 of 3

Whisk the cream until it is very stiff, then carefully fold in the yoghurt and extract.

Step 2 of 3

Place the meringues in a freezer bag and bash with a rolling pin to break into uneven pebble-sized pieces. It’s nice to have a mixture of large pieces and smaller crumbs, for the best texture.

Step 3 of 3

Fold together the cream mixture, the meringues, and the fruit. Cover and chill for at least 1 hour before serving.
