Add the water, sugar, salt and butter to a saucepan. Mix over low heat until butter has melted.

Step 2 of 10

Add the flours and baking powder.

Step 3 of 10

Mix over very low heat with a spatula, beating vigorously until a ball like mixture is achieved. Rest the mixture and let it cool for about 15 minutes stirring occasionally.

Step 4 of 10

When cooler, add the vanilla and some of the egg mix and beat with a spatula.

Step 5 of 10

Add the remaining egg mix a little at a time and continue beating vigorously with a spatula until a glossy mixture is achieved.

Step 6 of 10

Add to a strong piping bag with a star shaped nozzle and seal until ready to cook.

Step 7 of 10

Heat oil in a heavy bottomed pan or wok and pipe 10-15cm logs directly into the oil. Cut the dough with scissors to make it easier. Cook 4-5 at a time and fry until golden brown.

Step 8 of 10

Drain briefly on a paper towel and then roll in sugar and cinnamon mix while still hot.

Step 10 of 10

Add the sugar and cinnamon for coating together in a shallow bowl ready for tossing the churros in while they are still hot.
