  • 2 sheet frozen puff pastry, partially thawed
  • 1 brown onion, thinly sliced
  • 2tablespoons parsley, chopped
  • 200grams mushrooms, sliced
  • 120grams rocket mix (to serve)
  • 40grams stroganoff recipe base
  • 650grams chicken breast stir fry strips
  • 2tablespoons olive oil

Instruction tip
For a richer, creamier stroganoff, stir 2 tbs sour cream into chicken mixture before transferring to dishes.

Method

Step 1 of 3

Preheat oven to 200°C. Heat half the oil in a frying pan over high heat. Add onion and chicken. Cook, stirring for 5 minutes or until golden. Add mushroom, recipe base and 1 cup of water. Stir until combined, then bring to the boil and reduce to a simmer. Cook for 10 minutes or until cooked through. Remove from heat and stir in parsley.

Meanwhile, cut rounds from the puff pastry to cover tops of 4 x 1-cup-capacity dishes. Brush pastry rounds with remaining olive oil and place onto a lined baking tray. Bake for 15 minutes or until crisp and golden.

Step 3 of 3

Divide stroganoff mixture between dishes. Top each with a pastry lid and return to oven for 5 minutes until heated through. Serve with salad leaves.
