- 720grams sushi rice, rinsed and cooked as per packaged ingtructions
- 3tablespoons seasoned sushi vinegar
- 200grams cream cheese, softened
- 1tablespoons sesame oil
- 6tablespoons japanese kewpie mayonnaise
- 2tablespoons sriracha
- 400grams canned tuna, drained
- 3 medium avocado, skin and seed removed, thinly sliced
- 3tablespoons furikake
- 2 spring onions, thinly sliced
- 10 sheets nori, cut in four (to serve)

Description
Sushi is super tasty but tough to perfect at home. Try this simple sushi bake instead, with all the flavours you crave in one easy foolproof recipe.
Method
Step 1 of 5
Preheat the oven to 260℃/240℃ fan-forced. While the sushi rice is still warm add it to a large baking dish. Use a rice paddle to gently separate the grains of rice. Fold in the sushi vinegar and cream cheese until combined.
Step 2 of 5
Coat a 28.86 cmX 28.86 cm baking dish with sesame oil. Whisk the kewpie mayonnaise and sriracha together in a small mixing bowl. Add the tuna and 4 tbs of the sriracha mayonnaise mixing to combine in a separate bowl.
Step 3 of 5
Spread out half the sushi rice into the base of the greased baking dish evening it out with a rice paddle. Add a layer of sriracha tuna using half the mixture. Fan out half of the avocados on top of the tuna layer sprinkling the layer with half the furikake.
Step 4 of 5
Repeat the steps building a second layer topping it with the avocados. Add the remainder of the sriracha mayonnaise in a zigzag pattern to the top.
Step 5 of 5
Bake in the oven for 10 minutes until the sauce is sizzling and the rice has crisped up. Sprinkle on the spring onions with nori sheets on the side.
