- 300grams fresh spinach
- 1tablespoons water
- 75grams Parma ham, chopped
- 200grams ricotta cheese
- 1 pinch nutmeg, freshly grated
- 350grams béchamel sauce
- 50grams Parmesan cheese, grated
- 15grams dried breadcrumbs
- 1 pinch salt
- 1 pinch pepper

Method
Step 1 of 3
Cook the pasta in plenty of salted boiling water for 8-10 minutes until just tender. Drain.
Step 2 of 3
Pack the spinach into a saucepan and drizzle with the measurement water. Cover and cook for 2-3 minutes until wilted. Drain thoroughly and turn into a bowl. Add the Parma ham, ricotta and plenty of nutmeg. Season with salt and pepper, and mix well.
Step 3 of 3
Spoon the mixture into the pasta tubes, taking care not to tear them, and arrange side by side in a shallow ovenproof dish. Spoon the sauce over the pasta and sprinkle with the Parmesan and breadcrumbs. Place on the upper rack of the halogen oven.
