  • 250grams macaroni, roughly chopped
  • 150grams pumpkin, peeled and roughly chopped
  • 150grams cauliflower florets
  • 1/2 bunch thyme, leaves picked
  • 1 1/2 cup light tasty shredded cheese

Method

Step 1 of 4

Preheat oven to 180°C. Line a muffin pan with baking paper.

Step 2 of 4

Cook the macaroni according to packet directions. Drain and set aside to cool.

Step 3 of 4

Meanwhile, steam pumpkin and cauliflower over boiling water for 15 minutes or until soft. Transfer to a blender and blitz until smooth. Season with pepper to taste.

Step 4 of 4

Stir together vegetable mixture, macaroni, thyme and cheese in a large bowl. Divide mixture into muffin pan and bake for 20 minutes or until golden brown.
