  • 4 small sweet potatoes
  • 2tablespoons extra virgin olive oil
  • 1 small orange juiced and rind, finely grated
  • 1/3 cup sour cream light
  • 2tablespoons lemon thyme leaves
  • 200grams solanato tomatoes, quartered
  • 1 simply roast butterflied chicken American southern style

Method

Step 1 of 4

Preheat a barbecue with hood on medium. Cut sweet potatoes in half lengthways. Drizzle with 1 tbs oil, then season with salt and pepper.

Step 2 of 4

Line a baking tray with baking paper. Remove the chicken from packaging and place onto tray. Place sweet potato halves onto tray, cut side up. Transfer tray to barbecue hotplate and close hood. Roast for 45-60 minutes or until chicken is cooked through and sweet potato is tender and golden.

Step 3 of 4

Meanwhile, combine the tomato, orange rind, juice, half the thyme and remaining oil in a small bowl. Season to taste.

Step 4 of 4

Cut chicken into pieces and place on a platter with sweet potato. Spoon sour cream onto potatoes. Top with tomato salad and sprinkle with remaining thyme. Serve.
