  • 2 small lemons
  • 1/2 cup pitted Sicilian olives, finely chopped
  • 1tablespoons drained capers, finely chopped
  • 1tablespoons extra virgin olive oil
  • 1tablespoons pine nuts, roughly chopped
  • 200grams green beans, trimmed, halved
  • 40grams salted butter
  • 1 clove garlic, crushed
  • 1/4 bunch basil, leaves picked

Description

Switch up your dinner with this 25-minute, Sicilian-inspired salmon recipe. Pine nuts give a delicious crunch and the olives pair perfectly with fish.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper. Place salmon, skin-sides down, on tray.

Step 2 of 4

Zest 1 lemon. Combine olives, capers, oil, lemon zest and pine nuts in a bowl. Toss to combine. Spoon olive mixture over salmon. Bake for 6 minutes or until salmon is just cooked through.

Step 3 of 4

Meanwhile, cook beans in a medium saucepan of boiling water for 1 minute or until bright green and just tender. Drain. Heat a medium frying pan over medium heat. Cook butter and garlic for 30 seconds, stirring, or until fragrant. Add beans and toss to coat. Remove pan from heat and toss through half of the basil. Season.

Step 4 of 4

Cut remaining lemon into wedges. Divide salmon and bean mixture among plates. Serve with lemon wedges and remaining basil leaves.
