  • 1tablespoons dried oregano
  • 15-17 cloves garlic, 5 garlic cloves, crushed
  • 4 lemons, zested, juiced
  • 1/4 cup extra virgin olive oil
  • 2kilograms leg of lamb
  • 12 white washed potatoes, peeled, halved
  • 1 bunch oregano, leaves picked
  • 2 cups Woolworths frozen Australian peas

Description

Zesty lemon and fresh Australian lamb make for a lipsmacking bite of roasted goodness, best paired with baked potatoes.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Combine dried oregano, crushed garlic, zest of 1 lemon, 2 tbs lemon juice and 1 tbs oil in a small bowl. Place lamb in a large baking dish and rub with oregano mixture. Season.

Step 2 of 4

Place potatoes on a baking tray. Drizzle with remaining oil and season. Bake both lamb and potatoes for 1 hour.

Step 3 of 4

Reduce oven to 200°C/180°C fan-forced. Slice remaining lemons and arrange over lamb. Add garlic bulb to potatoes. Cook for a further 45 minutes or until lamb is cooked through and potatoes are golden and crisp. Stand, loosely covered, for 10 minutes.

Step 4 of 4

Meanwhile, cook peas according to packet instructions. Serve lamb scattered with oregano and with potatoes, garlic and peas, drizzled with pan juices.
