  • 1 avocado, halved, deseeded, peeled
  • 1 lime juiced
  • 1/2teaspoons Tabasco sauce
  • 4 white bagels, split, toasted
  • 1/3 cup onion relish

Method

Step 1 of 4

Heat a large frying pan over medium-high heat. Add bacon and cook for 4 minutes on each side or until golden and crisp. Transfer to a plate lined with paper towel.

Heat oil in same pan over medium-high heat. Crack eggs into pan and cook for 4 minutes or until cooked to your liking.

Meanwhile, using a fork, lightly mash avocado in a bowl. Add lime juice and Tabasco, then stir to combine. Season.

Step 4 of 4

Spread bagel bases with avocado mixture, then top with bacon, eggs and relish. Sandwich with bagel tops and serve.
