  • 5milliliter olive oil cooking spray
  • 1 cup Napoletana pasta sauce
  • 1 cup mozzarella, grated
  • 4 large basil leaves
  • 4 brioche buns, split, toasted
  • 1/3 cup whole egg mayonnaise
  • 2 tomatoes, thinly sliced
  • 60grams baby rocket leaves

Destined to become a family favourite, this chicken parmigiana burger recipe is perfect for an easy midweek dinner.

Method

Step 1 of 3

Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper. Place chicken on tray and spray with a little oil. Cook for 10 minutes or until heated through.

Step 2 of 3

Spoon sauce over chicken, season, then scatter over mozzarella. Bake for 10 minutes or until cheese has melted. Top each chicken with a basil leaf, spray with a little oil, then bake for a further 5 minutes or until cheese is golden.

Step 3 of 3

Spread bun bases with mayonnaise, then top with tomato, baby rocket leaves and chicken. Sandwich with bun tops and serve.
