Description
These gluten-free cardamom infused chickpea flour balls are a popular Indian sweet treat.
Method
Step 1 of 4
Heat a dry pan on high heat and toast the cashew nuts for 5 minutes, tossing to ensure they don't burn. Tip on to a chopping board and finely chop.
Step 2 of 4
Melt the ghee in a large wok and tip in the chickpea flour. Cook, stirring all the time, for 15 minutes. Stir in the chopped cashews, remove from the heat and leave to cool slightly. Tip into a large bowl.
Step 3 of 4
Whisk the icing sugar and cardamom powder together in a bowl and tip into the flour mix along with the vanilla and a couple of tablespoons of water. Knead to a smooth dough and leave to cool.
Step 4 of 4
Roll the mix into balls with your hands. Stud each ball with chopped nuts and serve.
