- 2tablespoons peanut oil
- 1 onion, thinly sliced
- 100grams snow peas, halved lengthways
- 1 clove garlic, finely chopped
- 15grams fresh ginger root, peeled and finely chopped
- 1 small red chilli, finely chopped
- 200grams black bean sauce
- 1 pinch salt
- 1 pinch pepper

Method
Step 1 of 2
Trim the steak of all fat and then cut the meat into thin slices across the grain. Heat half the oil in a wok or large frying pan, add the beef, in 2 batches, and cook, stirring, until well browned all over. Transfer to a bowl.
Step 2 of 2
Heat the remaining oil in the pan, add the onion and snow pea and stir-fry for 2 minutes. Add the garlic, ginger and chilli and stir-fry for 1 minute. Add the black bean sauce and cook, stirring, for 5 minutes or until the sauce begins to thicken. Season to taste with salt and pepper and serve immediately with steamed rice or egg-fried rice.
