  • 200grams wholegrain rice
  • 500grams beef mince
  • 2teaspoons olive oil
  • 2teaspoons cumin
  • 800grams black beans, canned, drained
  • 2teaspoons smoked paprika
  • 2 cloves garlic, peeled and minced
  • 1 cup beef stock, made with one stock cube
  • 1 medium lime, juiced
  • 4 medium tomatoes, diced
  • 100grams cheddar cheese, grated
  • 200grams lettuce, shredded

Description

This burrito bowl is a lighter way to enjoy your favourite Mexican flavours.

Add guacamole, chopped coriander and jalapenos for a real Mexican feast in a bowl.

Method

Step 1 of 4

Cook the wholegrain rice according to pack instructions, drain and set aside with the lid on the pot.

Step 2 of 4

In a large frying pan on a high heat, add oil and cook the beef mince for 8 minutes, breaking up with a spoon, until nicely browned and crispy. Add the cumin and cook for 2 more minutes. Remove the beef from the pan with a slotted spoon and place in a bowl.

Tip the black beans into the same pan on a medium heat and add the garlic and smoked paprika. Cook for two minutes, pour in the beef stock and half the lime juice and cook for 3-4 minutes. Remove from the heat and mash with a fork or potato masher.

Step 4 of 4

To serve, divide the rice, beef and bean mix between four bowls in separate sections, add lettuce and chopped tomatoes and top with grated cheese. Squeeze over the remaining lime juice and serve.
