- 1.30kilograms Woolworths COOK slow cooked pork ribs in smokey BBQ sauce
- 1/4 cup extra virgin olive oil
- 1 lime, zested, juiced
- 1teaspoons ground cumin
- 1teaspoons brown sugar
- 500grams sweet corn
- 250grams cherry tomatoes
- 1 small red onion, cut into thin wedges
- 1/4 bunch continental parsley, leaves picked

Pork ribs glazed in a smoky BBQ sauce? Yum. This mouthwatering recipe is taken next level with a sweet corn salad that’s the perfect accompaniment.
Method
Step 1 of 5
Preheat oven to 220°C/200°C fan-forced. Heat ribs according to packet instructions.
Step 2 of 5
Meanwhile, preheat a barbecue grill or chargrill pan over medium heat. Whisk oil, lime juice, cumin and sugar in a medium bowl. Season with pepper.
Step 3 of 5
Grill corn for 8 minutes, turning and brushing with 2 tsp lime mixture, or until tender and lightly charred. Transfer to a board. Using a small knife, cut kernels from cobs. Discard cobs.
Step 4 of 5
Grill tomatoes for 3 minutes, turning and brushing with 1 tsp lime mixture, or until lightly charred.
Step 5 of 5
Add corn, tomatoes, onion, half of the parsley and zest to remaining lime mixture and toss to combine. Garnish ribs and salad with remaining parsley, then serve.
