Method

Preheat oven to 220°C.
Step 2 of 5
Place pork into a large roasting pan. Using your hands to rub oil into the rind. Sprinkle sea salt flakes over and press on with your hands. Weigh and calculate cooking time allowing 40 minutes per kilo.
Step 3 of 5
Place pork into oven. If crackling should begin to colour too much, loosely cover with foil. Transfer to a chopping board and cover to keep warm.
Step 4 of 5
Reserve pan juices for apple gravy. Stand for 10 minutes before removing crackling and thinly slicing meat.
Step 5 of 5
Serve meat with crackling pieces and apple gravy.
