  • 425grams SPC baked beans in rich tomato
  • 410grams Ardmona tomatoes, diced or crushed
  • 2 eggs
  • 2 chorizo sausages, sliced
  • chilli flakes (optional)
  • 1 pinch salt (to taste)
  • 1 pinch pepper (to taste)
  • flat Bread (to serve)

Description

Make this baked eggs recipe for a tasty breakfast for two. With baked beans, chorizo and tomato, it’s a filling, flavoursome way to start the day.

Method

Step 1 of 5

Preheat oven to 180°C (160°C fan-forced).

Step 2 of 5

Heat a frying pan with a splash of oil. Lightly fry baked beans and chorizo sausage. Add tomatoes and bring to simmer for 3-4 mins.

Step 3 of 5

Spoon bean and tomato mixture into 2 oven-safe ramekins and make a well in the middle of each. Break an egg into each ramekin and season with salt, pepper and chilli flakes (optional)

Step 4 of 5

Place ramekins into the oven and bake for 10-15mins until eggs are cooked.

Step 5 of 5

Serve immediately with flat bread.
