  • 1 brown onion, chopped
  • 1/4 cup flat-leaf parsley leaves
  • 2tablespoons baby capers, rinsed
  • 1teaspoons dried chilli flakes
  • 800grams can diced tomatoes
  • 120grams leafy salad mix (to serve)
  • 1 cup kalamata olives
  • 1tablespoons olive oil
  • 4 chicken breast fillets
  • 2 garlic cloves, crushed

Method

Step 1 of 2

Preheat oven to 180°C. Heat oil in an ovenproof pan over medium heat. Cook onion and garlic for 5 minutes or until tender. Stir in tomatoes, chilli flakes, olives and capers and bring mixture to the boil. Add chicken to pan, covering with sauce.

Step 2 of 2

Transfer to oven and bake for 20 minutes or until chicken is cooked through. Sprinkle with parsley and serve with salad.
