  • 100grams fresh root ginger, peeled and thinly shredded
  • 2 cloves large garlic, thinly sliced
  • 4 spring onions, diagonally sliced
  • 250grams thin asparagus spears, cut into 3 cm lengths
  • 150grams snow peas, cut in half diagonally
  • 150grams bean sprouts
  • 3 1/2tablespoons light soy sauce (save 1/2 tbs to serve)
  • 500grams rice, steamed (to serve)

Description

This asparagus and snow pea stir fry recipe fuses authentic Chinese flavours with crunchy veggies. The perfect side dish to your asian meal or simply serve as a vegetarian main with rice.

Method

Step 1 of 3

Heat a large wok until it is smoking then add the oil. Stir-fry the ginger and garlic for 30 seconds, add the spring onions and cook for a further 30 seconds. Add the asparagus and cook, stirring frequently, for another 3-4 minutes.

Step 2 of 3

Add the snow peas and cook for 2-3 minutes until the vegetables are still crunchy but beginning to soften. Finally, add the bean sprouts and toss in the hot oil for 1-2 minutes before pouring in the soy sauce and removing from the heat.

Step 3 of 3

Serve immediately with steamed rice and extra soy sauce, if liked.
