  • 375grams Woolworths COOK Vietnamese style chicken kebabs
  • 450grams Sunrice microwave brown rice
  • 200grams beetroot & feta salad bowl
  • 70grams canned Edgell chickpeas with zesty vinaigrette

Description

Learn how to transform a few simple ingredients into a vibrant spring salad with this speedy chickpea, beetroot and chicken salad recipe.

Method

Step 1 of 4

Preheat a chargrill pan over medium-low heat. Cook kebabs, turning occasionally, for 15 minutes or until chicken is cooked through and lightly charred.

Step 2 of 4

Meanwhile, microwave rice according to packet instructions. Transfer rice to a large bowl. Set aside to cool slightly.

Step 3 of 4

Carefully remove chicken from skewers. Add chicken and salad kit ingredients, including three-quarters of the dressing, to rice and toss gently to combine.

Step 4 of 4

Divide salad among bowls. Top with undrained chickpeas and drizzle with remaining dressing. Serve.
