  • 4 medium chicken breasts
  • 2tablespoons balsamic vinegar
  • 1tablespoons olive oil
  • 50grams goats cheese, crumbled
  • 150grams strawberries, sliced
  • 100grams spinach
  • 1tablespoons honey
  • 1tablespoons Dijon mustard
  • 2tablespoons balsamic vinegar
  • 1tablespoons olive oil
  • 1 pinch salt
  • 1 pinch black pepper

Description

A light and simple chicken salad with the perfect mix of sweet and savoury.

Method

Step 1 of 5

Pre-heat the grill to medium and line a baking tray with foil.

Step 2 of 5

Place the chicken breasts in a bowl, pour over half the balsamic vinegar, half the olive oil and seasoning, then flip the chicken to coat well.

Step 3 of 5

Place the chicken on the baking tray and grill for 10 minutes then turn them over and grill for a further 10 minutes.

Step 4 of 5

For the dressing, add the remaining balsamic vinegar and olive oil, honey and Dijon mustard to a small bowl and whisk to combine.

Step 5 of 5

Slice the chicken and add to a large bowl with the baby spinach and crumbled goats cheese. Pour over dressing, mix well and serve.
