  • 1tablespoons sesame oil
  • 1/4 wedge red cabbage
  • 1/2 bunch choy sum, leaves separated
  • 3 cm-piece ginger
  • 270grams soba noodles
  • 1 cup cashews
  • 1/4teaspoons dried chilli flakes
  • 180grams baby leaf salad with beetroot
  • 2tablespoons sesame seeds
  • 2tablespoons soy sauce
  • 1/3 cup crunchy peanut butter
  • 2 cloves garlic

Method

Step 1 of 3

Cook noodles in a large pan of boiling water for 3-4 minutes or until just tender. Drain and rinse in cold water until cool. Set aside.

Step 2 of 3

To make the dressing, whisk peanut butter, 1/4 cup warm water, oil, soy sauce, garlic, ginger and chilli flakes together in a small bowl until combined.

Step 3 of 3

Toss noodles with half the dressing in a bowl. Add salad leaves and cabbage and toss to combine. Serve with choy sum leaves, sesame seeds, cashews and remaining dressing
