- 4 tomatoes, chopped
- 1 carrot, grated
- 1 medium avocado
- 1/2teaspoons ground coriander
- 2teaspoons cumin
- 1 lemon, juiced
- 2 cup iceberg lettuce blend
- 260grams lean beef mince
- 1teaspoons olive oil
- 1 clove garlic, crushed
- 3/4 cup light Greek-style yoghurt
- 160grams light tasty shredded cheese
- 8 corn tacos, prepared according to packet directions

Method
Step 1 of 3
Heat oil in a frying pan over medium heat. Add garlic and sauté for 1 minute. Add mince and cook for 2-3 minutes or until cooked through. Add spices and stir to combine. Cook for a further 1 minute.
Step 2 of 3
Mash avocado with a fork and season with lemon juice and pepper.
Step 3 of 3
Serve beef mince with taco shells, avocado, yoghurt, cheese, carrot, mixed leaves and tomato.
