  • 125grams butter, chopped
  • 1/2 cup crunchy peanut butter
  • 1teaspoons dried chilli flakes
  • 1 pinch freshly ground black pepper
  • 1 pinch sea salt flakes

Method

Step 1 of 3

Preheat oven to 180C. Line 2 baking trays with baking paper.

Step 2 of 3

Place flour, baking powder and chilli flakes into a food processor and pulse for 30 seconds. Add butter and peanut butter and process until well combined and mixture resembles breadcrumbs. Add 2 tbs cold water and process until a dough forms. Turn onto a lightly floured surface and knead until smooth. Divide mixture in half and press into 2cm round discs. Wrap in baking paper and refrigerate for 20 minutes or until firm.

Roll dough out between 2 sheets of baking paper until 4mm thick. Cut 6cm rounds from dough, re-rolling off cuts. Place onto prepared trays and sprinkle with sea salt flakes and pepper. Bake for 20 minutes or until golden and crisp. Transfer to a wire rack to cool. Serve with cheese and assorted fruit if desired.
