  • 1/4 cup rice wine vinegar
  • 1tablespoons caster sugar
  • 1 large carrot, shredded
  • 1/2 cup Greek-style yoghurt
  • 1/2teaspoons chilli powder
  • 1/2teaspoons mild paprika
  • 4 large wholegrain wraps
  • 1 oak leaf lettuce, leaves separated
  • 1 Lebanese cucumber
  • 80grams bean sprouts
  • 1/4 cup small mint leaves
  • 1/4 cup coriander leaves
  • 20 cooked tiger prawns, peeled, deveined, tails intact
  • 1 fresh long red chilli (optional)

Description

Elevate your lunch with these funky prawn wraps, stuffed with leafy vegetables, carrot tendrils and a spicy-sweet chilli aioli.

Method

Step 1 of 4

Combine vinegar, sugar and 1/4 cup water in a bowl. Season. Add carrot and set aside to pickle for 10 minutes.

Step 2 of 4

Combine yoghurt, chilli powder and paprika in a small bowl.

Step 3 of 4

Drain carrot. Spread wraps evenly with yoghurt mixture, and top with lettuce, cucumber, sprouts, carrot, mint, coriander, prawns and fresh chilli, if using. Season with pepper.

Step 4 of 4

Fold wraps to enclose filling and serve.
