  • 1tablespoons fennel seeds
  • 200grams smooth feta
  • 2 cup leftover baby spinach leaves
  • 1tablespoons olive oil
  • 1 free range egg, beaten
  • 1/2 cup breadcrumbs
  • 2 cloves garlic

Description

These spinach and feta rolls are a tasty meat-free alternative to sausage rolls. Keep some in the freezer to serve with the party pies at your next event.

Method

Step 1 of 3

Preheat oven to 180°C. Line a baking tray with baking paper.

Step 2 of 3

Heat oil in a medium frying pan over low heat. Add onion and garlic, and sauté on low heat for five minutes. Add breadcrumbs, stirring for two minutes, then add spinach leaves and stir to wilt. Turn off heat, crumble in feta and season to taste.

Step 3 of 3

Divide the mixture into four and place each portion along the middle of each pastry half. Roll into sausage shape, ensuring the seam is at the bottom, and cut into smaller portions if desired. Brush rolls lightly with egg, sprinkle over fennel seeds and bake for 25 minutes or until golden.
