- 5 cup gluten free breadcrumbs
- 1 pinch pink salt ground (to taste)

Method
Step 1 of 3
Melt butter with olive oil in a large non-stick frying pan over a medium-low heat. Then add 1 sliced leek and diced rindless bacon and cook, stirring occasionally, for 5 minutes until leek is soft. Cool slightly.
Step 2 of 3
Add 5 cups of gluten-free breadcrumbs, 1/2 cup chopped parsley, thyme, grated rind of 1 lemon and 2 tbs juice. Season with salt and pepper.
Step 3 of 3
Lightly beat 1 egg, then stir into mixture until well combined.
