Method

Step 1 of 5

Preheat oven to 200°C. Line a deep loaf pan with paper.

Step 2 of 5

Spray diced pumpkin with oil and roast for 20 minutes or until softened. Cool. Transfer to a bowl.

Step 3 of 5

Fry onion and sliced mushrooms in oil until soft. Combine with pumpkin.

Step 4 of 5

Toast raw cashews then pulse in a food processor until finely chopped. Stir into pumpkin with eggs, gluten-free breadcrumbs, cheddar cheese and chopped parsley. Season into pan. Sprinkle over cheese.

Step 5 of 5

Bake for 25 minutes until golden. Stand for 5 minutes. Serve sliced with salad.
