  • 250grams chorizo sausage
  • 3 handful fresh basil (to garnish)
  • 2 medium zucchini, trimmed
  • 5milliliter virgin olive oil spray
  • 16 sicilian olives, pitted
  • 8 solanato tomatoes, sliced

Method

Step 1 of 3

Preheat a chargrill or large frying pan over medium heat.

Step 2 of 3

Cut chorizo into 16 x 2cm-thick diagonal slices. Using a vegetable peeler, shave zucchini into ribbons. Cook chorizo for 2 minutes on each side or until charred and cooked through. Transfer to a tray. Spray zucchini ribbons with oil and cook for 1 minute on each side or until charred and tender. Transfer to tray.

Step 3 of 3

Skewer an olive, tomato, zucchini and chorizo onto cocktail skewers. Transfer to a serving platter, garnish with basil and serve warm.
