- 2 cloves garlic, crushed
- 1 large leek, white part only chopped
- 3 green shallots, finely sliced
- 500grams fresh mushroom cups
- 125grams rindless short cut bacon, chopped
- 1/3 cup vintage cheddar cheese, grated
- 1tablespoons olive oil

Method
Step 1 of 3
Preheat oven to 200°C. Trim mushrooms stem-side up in baking dish.
Step 2 of 3
Heat oil in a frying pan. Cook bacon until crisp. Using a slotted spoon, remove bacon, leaving oil in pan. Add chopped mushroom stems, leek and green shallots and cook over a medium heat until very soft but not browned. Add garlic. Cool slightly.
Step 3 of 3
Add parsley, 3/4 of cheese and cooked bacon. Stir to combine. Spoon mixture into mushrooms and scatter with remaining cheese. Bake for about 20 minutes or until mushrooms are tender and cheese is golden.
