- 1/4 cup plain flour
- 60grams butter
- 125grams rindless bacon rashers, diced
- 1 leek, thinly sliced
- 1 brown onion, finely chopped
- 1kilograms sweet potato, peeled, thinly sliced
- 2teaspoons Italian herbs
- 2tablespoons parmesan, finely grated
- 1 1/4 cup light milk
- 120grams baby spinach leaves
- 750grams premium beef mince
- 1tablespoons olive oil
- 700grams tomato passata sauce
- 1 cup tasty cheese, grated
- 50grams tomato paste

Method
Step 1 of 5
Heat oil in a large frying pan over medium heat. Cook onion, leek and bacon for 8 minutes or until tender. Add mince and cook, stirring with a wooden spoon. Stir in herbs, tomato paste, passata and cup water until well combined. Bring mixture to the boil and simmer for 20 minutes or until mixture has thickened. Season with salt and pepper. Cool.
Step 2 of 5
Place sweet potato in a large saucepan and cover with cold water. Place over a high heat and bring to the boil. Simmer for 2 minutes or until just tender. Drain and cool.
Step 3 of 5
Meanwhile, melt butter in a saucepan over medium heat. Stir in flour and cook for 2 minutes or until bubbly. Remove pan from heat and slowly whisk in milk. Return to heat and whisk constantly until mixture comes to the boil and thickens. Add cup tasty cheese and stir until melted. Remove sauce from heat and cover surface with baking paper (see tip).
Step 4 of 5
Place spinach into a large bowl and cover with boiling water. Stand for 1 minute. Drain and rinse under cold water. Squeeze liquid from spinach and roughly chop. Stir through mince.
Step 5 of 5
Preheat oven to 180°C. Spread 1 cup mince mixture into the base of a 12-cup baking dish. Top with a layer of sweet potato, overlapping slightly. Drizzle with cheese sauce. Cover with half the remaining mince, sweet potato, cheese sauce, then remaining mince and lastly sweet potato. Spread remaining cheese sauce over top of layers and sprinkle with remaining tasty cheese and parmesan. Bake for 35 minutes or until golden. Stand for 10 minutes before cutting into pieces.
