- 1tablespoons tandoori curry paste
- 2 carrots, peeled and shredded
- fresh coriander (few sprigs to serve)
- 2 Lebanese cucumbers, shredded
- 1 large free-range BBQ roast chicken
- 1/4 cup whole egg mayonnaise
- 4 ciabatta rolls
- 4 large butter lettuce leaves
Method
Step 1 of 2
Strip meat from chicken, discarding skin and bones. Shred meat.
Step 2 of 2
Stir tandoori paste into mayonnaise in a small bowl. Split rolls and spread with tandoori mayonnaise. Fill with lettuce, chicken, cucumber, carrot and coriander. Drizzle with any remaining mayonnaise.
