Avocado & Salmon Rolls

- 75grams rice vermicelli noodles
- 1 avocado
- 1packets rice paper
- 1 butter lettuce
- 1 lime, juiced
- 1/2 cup wasabi-flavoured mayonnaise
Method
Step 1 of 4
Prepare rice vermicelli noodles following packet instructions. Drain. Roughly chop with scissors.
Step 2 of 4
Dip 1 rice paper into a bowl of warm water for 20 seconds until softened. Lay on a clean board.
Step 3 of 4
Arrange coriander leaves, smoked salmon slices, noodles, avocado and butter lettuce leaves across the centre. Fold sides in and roll up to enclose filling. Repeat to make 12 rolls.
Step 4 of 4
Combine 1/2 cup wasabi-flavoured mayonnaise and juice of 1 lime and serve with the rice paper rolls.
