- 1 medium cauliflower, trimmed and divided into florets
- 1 onion, finely chopped
- 1 pinch nutmeg
- 4 rasher bacon, rind removed and finely chopped
- 1 pinch pepper (for seasoning)
- 1teaspoons dijon mustard
- 1 1/2 cup fat reduced milk
- 1/3 cup fresh breadcrumbs
- 1 pinch pink salt ground (to taste)

Description
Take classic cauliflower cheese up a notch with this baked cauliflower recipe. With bacon swirled through the cheese sauce and sprinkled on top, this is sure to be a favourite around the dinner table.
Method
Step 1 of 4
Preheat oven to 180°C. Grease a 6-cup baking dish. Cook cauliflower in boiling, salted water for 5 minutes or until just tender. Drain well and arrange in baking dish.
Step 2 of 4
Heat butter in a saucepan over medium heat and cook onion and half of the bacon for 4 minutes or until softened. Remove pan from heat, add flour and stir with a wooden spoon until combined. Return to heat and cook gently for 2 minutes.
Step 3 of 4
Gradually add milk, stirring continuously and bring to a boil. Add mustard, nutmeg, 1 cup tasty cheese (reserving the remainder) and season with salt and pepper. Stir until cheese has melted.
Step 4 of 4
Pour sauce over cauliflower, sprinkle with breadcrumbs, remaining bacon and cheese. Bake for 15 minutes or until golden.
