- 500grams small white washed potatoes, quartered
- 1 cup light sour cream
- 1tablespoons Dijon mustard
- 500grams marinara mix, drained
- 1 cup frozen peas, thawed
- 2 spring onions, finely sliced
- 2tablespoons curly parsley, chopped
- 4 sheets filo pastry
- 40grams butter, melted
Description
This seafood marinara pie is creamy, warming and easy to make. Scrunching up the filo pastry on top makes a delicious and impressive pot pie lid.
Method
Step 1 of 5
Preheat oven to 200°C. Place a 6-cup capacity shallow pie dish on a baking tray to catch any spills.
Step 2 of 5
Place potato in a large saucepan and cover with cold water. Bring to the boil and cook for 8 minutes or until tender. Drain well and roughly mash.
Step 3 of 5
In a large bowl, whisk sour cream and mustard together. Add potato, marinara mix, peas, onion and parsley. Season and mix well. Spoon into pie dish.
Step 4 of 5
Brush each filo sheet with butter and cut lengthways into 3 strips. Scrunch each strip into a loose ball and arrange on top of filling.
Step 5 of 5
Bake pie for 25 minutes or until golden brown and filling starts to bubble up around the edges. Serve.
