  • 60grams butter
  • 2 cup milk
  • 500grams salmon, cut into 2cm pieces
  • 1 large cauliflower, cut into florets
  • 2tablespoons flat-leaf parsley, chopped
  • 1tablespoons dill, chopped
  • 1teaspoons dijon mustard
  • 2 eggs, lightly whisked
  • 1 cup tasty cheese, grated

Method

Step 1 of 4

Preheat oven to 200°C. Grease 4 x 1 1/2 cup-capacity ovenproof dishes.

Step 2 of 4

Cook cauliflower florets in a saucepan of boiling, salted water for 2 minutes. Drain, combine with salmon and divide between prepared ovenproof dishes.

Step 3 of 4

Melt butter in a saucepan over medium heat. Add flour and cook, stirring for 2 minutes until pale golden. Remove pan from heat and gradually whisk in milk until smooth. Return pan to heat and simmer for 3 minutes until mixture has thickened. Remove pan from heat and add herbs, eggs and mustard and stir well to combine. Season.

Step 4 of 4

Pour the sauce mixture over the cauliflower and fish mixture in ovenproof dishes. Sprinkle over sour dough breadcrumbs. Top with grated cheese. Transfer ovenproof dishes to a large baking tray and bake for 10-15 minutes until golden. Serve.
