- 1 large head cabbage, cored, diced medium
- 25grams unsalted butter
- 25grams plain flour
- 250milliliter whole milk
- 150grams sharp cheddar cheese, shredded, divided

Description
This rich and indulgent bake combines salty bacon with green cabbage and plenty of cheddar.
Method
Step 1 of 5
Preheat a large skillet set to medium heat for 1 minute. Add in the diced bacon rashers cooking for 5 minutes until the fat is rendered and the bacon is starting to crisp up. Add in the onions cooking for 5 minutes until starting to brown. Mix in the cabbage in batches until the cabbage has wilted.

Preheat the oven to 200°C. Place a pot onto the stovetop set to medium heat, add the butter stirring until melted. Stir in the flour using a wooden spoon, cooking for 1 minute scraping the sides of the pot to keep the flour from burning.

Remove from the heat, slowly whisking in the milk until smooth. Return to low heat for 2 minutes before whisking in half of the shredded cheese mixing until smooth.
Step 4 of 5
Season the cheese sauce before adding the sauce to the pan with the bacon and cabbage coating with the sauce. Pour into a medium baking dish topping with the remainder of the shredded cheese.

Bake in the oven for 40 minutes until the top is golden brown. Remove from the oven letting the gratin cool for 20 minutes before portioning.
