  • 500grams large cherry tomatoes
  • 1teaspoons lemon, rind finely grated
  • 125grams cream cheese
  • 1 pinch black pepper (for seasoning)
  • 12 small basil leaf (to garnish)
  • 1tablespoons lemon juice
  • 2tablespoons basil, finely chopped
  • 1 pinch pink salt ground (to taste)

Method

Step 1 of 3

Slice tops from 2 x 250g punnets large cherry tomatoes. Using a teaspoon scoop out seeds and discard.

Step 2 of 3

Put 125g cream cheese, fresh basil, finely grated lemon rind and lemon juice into a small food processor. Process until smooth and well combined. Season with salt and white pepper. Transfer mixture to a zip-lock bag. Snip off one corner and pipe mixture into prepared tomatoes. Garnish with a small basil leaf.

Place onto a platter and serve.
