  • 1 1/2 cups caster sugar
  • 1/2 cup brown sugar
  • 270milliliter canned coconut milk
  • 1/3 cup virgin coconut oil
  • 1/3 cup Woolworths maple syrup
  • 3teaspoons vanilla extract

Method

Step 1 of 4

Grease a 20cm (5cm deep) square cake pan. Line base and sides with baking paper, extending paper 2cm over sides.

Step 2 of 4

Place sugars, milk, oil, syrup and a pinch of salt in a medium saucepan and heat over medium heat, stirring, for 5 minutes or until sugar has dissolved. Bring mixture to the boil, without stirring. Reduce heat to medium-low and simmer, uncovered, for 10 minutes or until mixture reaches 115°C on a candy thermometer. Remove pan from heat and stand for 5 minutes.

Step 3 of 4

Using an electric mixer, beat sugar mixture and vanilla in a large bowl for 10 minutes or until mixture has cooled and thickened.

Step 4 of 4

Working quickly, pour mixture into cake pan and smooth top. Stand for 3 hours or until set. Cut into 2cm squares.
